Hokkaido with hearty mushroom-feta-tomato stuffing
Ingredients for 4 servings:
- 2 hokkaido pumpkins
- 300g button mushrooms
- 200g bell peppers
- 100g gouda, shredded
- 100g feta
- 50g tomato paste
- 1 can crème fraîche
- 1 onion
- 2 garlic cloves
- 2 tomatoes
- parsley
- pepper, salt, chili, nutmeg
- Sear button mushrooms and bell peppers
- Add onion and garlic
- Add crème fraîche and tomato paste
- Reduce heat and add feta and gouda
- While the cheese is melting: Clean the pumpkin and give it a nice lobotomy, remove the seeds with a spoon
- Add the stuffing and sprinkle some gouda on top
- 30 to 40 mins at 190°C in the oven, depending on pumpkin size

Best part: The entire pumpkin - apart from the stalk - is edible and tastes delicious.
For leftover stuffing: Add some water the next day and you got yourself some pasta sauce.
I never considered to just bake the pumkin. I shall take notes :D
This isn’t vegan though right? Or am I missing something?
Mucked up during the translation, good catch.
Interested. To be fair doesn’t really like inviting. Can you eat everything? Including the skin (? Probably not the right word) of the pumpkin?
Edit: like = looks
For hokkaidos specifically, the skin is not very thick at all and softens during cooking. It has a noticable nutty flavor and in terms of texture, you could compare it to a softer version of an unpeeled potato.
The ones made for eating, yes. The ones sold for jack-o-lanterns or other decorative gourds, no.
Thanks!
