I wish they were motivated by workers’ rights though. I don’t understand why the EU never makes a deal about this.

A massive part of the reason that Chinese goods undercut European ones is that workers in Europe are entitled to a reasonable amount of time off every week, sick pay, minimum wages and so on.

Import tariffs on a particular country (aka customs duties) based on worker welfare in that country would help protect workers inside the EU and also encourage other countries to improve conditions at home.
